INGREDIENTS:
Cake:

½ cup vegan butter, like Earth Balance (or regular butter)
-
¾ cup brown sugar
-
2 teaspoons vanilla extract
-
1 ½ cup gluten-free baking flour (Bob's Red Mill 1 to 1, or regular all purpose flour!)

2 ½ teaspoons baking powder
-
½ teaspoon kosher salt
-
½ cup almond milk (or oat, or regular!)
Filling/Topping:
-
1 cup gluten-free baking flour (I used Bob’s Red Mill in the dark red bag)
-
1 cup brown sugar
-
2 teaspoons cinnamon
-
½ teaspoon kosher salt
-
6 tablespoons vegan butter
Glaze (optional)
-
1/2 cup confectioners sugar
-
1 tablespoon almond milk (or regular!)
DIRECTIONS:

Preheat the oven to 350, & then grease your loaf pan with Pam or coconut oil.

In a standing mixer, cream the butter & sugar together. Add the vanilla. Beat again.

Whisk together all the dry ingredients in a separate bowl. Once combined, add to the wet mixture. Beat until just combined.

Pour in the milk and beat until you have a smooth, slightly thick batter.

Set aside. Make the filling.

Filling: combine all ingredients (butter, flour, sugar, cinnamon & salt) and pinch together (using your hands works best!) until crumbly.

Now prep the loaf. Transfer half of the batter to the bottom of the prepared loaf pan. Use a wet small offset spatula to gently spread the batter evenly across the loaf pan.

Sprinkle the filling across the batter.

Add remaining batter on the top, & then sprinkle the remaining filling mixture on top.

Bake for 1 hour.

While baking, if desired, create sugar glaze. Mix confectioners sugar & milk together with a fork. Add more confectioners sugar if needed for desired thickness.

Take the loaf from the oven & drizzle with glaze. Enjoy!
Pair with Kia Kaha Blend Dark Roast
You can brew the Kia Kaha Blend in your preferred brewing method, here we are recommending brewing in a French Press. Equipment needed - French Press, Scales (that measure in grams), Coffee, Filtered Water and stirrer.
- Boil water and pre heat French Press by filling it quarter way with boiling water, then place water back on boil.
- Weigh out coffee to be used. We typically aim for 30 grams of coffee for 300 grams of water (one cup). So if you were to make three cups of coffee, you would weigh out 90 grams of coffee and 900 grams of water. *If you do not have a kitchen scale, you can add 1-3 tablespoons of coffee per cup of coffee you are preparing.
- Grind coffee so it is coarse like cracked pepper.
- Discard pre heat water and add ground coffee into your French Press.
- Place your French Press with coffee in it on your scales and tare to zero.
- Let boiling water drop to 200F or about one minute off boil.
- Pour just enough water into the French Press to cover the grounds.
- Stir the grounds and wait 45 seconds.
- Add your remaining water until your scales read 900 grams.
- Place the top on your French Press and wait 6 minutes.
- While you wait, pre heat your cups with the remaining hot water.
- When 6 minutes us up, discard the water in your cups, slowly press down on your French Press. (aim for 30 seconds)
- As soon as you hit the bottom of your French Press, serve the coffee straight away. This will prevent any sediment making its way back up through the filter and into your cup.
