Dark Chocolate | Cherry | Smooth

During our sourcing early this year, we brought in a sample from the Huehuetenango region of Guatemala for our Cold Brew Blend offering. With Guatemala being one of the finest growing regions in the world, and one of our favorite regions, we decided to experiment with the roast profile from the Cold Brew Blend and brew the coffee hot. What we found was so special that have decided to launch it as a medium roast to be added to our core lineup!

When crafting this roast profile, we approached it with the following goals in mind

• A balanced profile with noticeable sweetness, richness, and smoothness revered in Guatemalan coffees
• A balance of flavors including dark chocolate and cherry coffee that can be brewed with various brew methods and still maintain a balanced flavor profile
• A coffee that can be brewed with various brew methods and still maintain a balanced flavor profile
• A five dimensional profile of: sweetness, fruit, richness, smoothness, and balance

With this coffee coming from a single origin, we let the inherent characteristics of the coffee shine through, and didn't want, or need, to blend it with another coffee to unlock it's potential.

With this region's high altitude and dry climate, it causes the coffee berries (and seeds, or “beans” inside) to grow slower, allowing more complex flavors to develop. The growing conditions and soil in this area are also known for producing a great acidity and fruity flavors. We are excited about this coffee as we feel it is on the same level of quality of our best selling Happy Medium Blend, but with different characteristics which is what prompted us to add it to our core lineup.

*Like other fruits, coffee is seasonal and we love that! Because of this seasonality, we will occasionally switch out a component for another coffee variety with very similar characteristics. By changing the components with the seasons, we are able to offer the most vibrant coffee flavors all year round, which also allows for importing the freshest green coffee possible.
