Guatemala is home to some of the best soil and coffee growing conditions in the world, and is one of our favorite regions in the world. We are so incredibly excited to introduce this dark roast to our lineup!
We like to say that our craft is part artistry, part science, and a lot of luck! That was the case in finding this dark roast profile for this particular coffee. We had sourced this natural processed coffee as our light roast El Camino due to the strawberry notes and it has been a fan favorite. As part of our ongoing testing and experimentation with coffees, we took the coffee to a dark roast profile and were amazed with the change of characteristics and flavors the coffee underwent! It is now one of our favorite dark roasts that we've ever tasted.
About natural processed coffee: Natural process coffee is a coffee drying method where the coffee cherry is left to dry in the sun before the bean is removed. This process allows natural sugars and fruity notes from the cherry to seep into the bean, resulting in a coffee that has hints of fruit, and has a full-bodied, complex flavor.
At a dark roast profile, the Guatemala Blue Ayarza is very unique, which is what we love about it. It also has a rich body with a smooth finish indicative of a dark roast coffee while the hint of strawberry shines through for complexity not usually seen in a dark roast. We can't wait for you to try it!
